I'm pretty new to working with gumpaste. Since people generally don't eat gumpaste decorations, does it matter which brand I buy? Is one easier to work with or better than another?

If I need to grab it off the shelf, I like the Wilton pre-made gum paste.

When I have time to order it, I really like the Choco-Pan pre-made gum paste--nice and white.
