Help With Red Velvet Cake...

hello fellow cakers,

I have a request from a client to do a double barrel cake. I would be using 2 tall six inches pan. Now the client wants a red velvet cake with cream cheese frosting. I generally use ganache to cover my cakes before using fondant. Can anyone tell me
If a red velvet cake is dense enough so I can cover it with fondant. Ther is a ballerina figurine to go on top of the cake.
Do I just use cream cheese frosting instead of ganache and cover it with fondant
Any tips on covering a double barrel cake.

I have made a 3 D dog cake out of Red Velvet cake. This is the only cream cheese frosting recipe I use. It does crust and tastes wonderful. If the topper is heavy just add a couple of dowels underneath. It's just a really messy cake to work with because of the red dye. http://cakecentral.com/recipes/2047/crusting-cream-cheese-icing
