Google Paula Deen's banana cake. It's very good and moist. i used a little less bananas and it was still great! I trust her recipes. They always turn out good.
Take your best vanilla cake recipe. Add mashed banana. Perfect.

My girlfriend asked me to make her daughter's graduation cake and gave me this recipe. YUM YUM YUM!
Banana Cake
3/4 cup butter
2 1/8 cups sugar
3 eggs
2 tsp vanilla
3 cups flour
1 1/2 tsp baking soda
1/4 tsp salt
1 1/2 cups buttermilk
2 tsp lemon juice
1 1/2 cups mashed bananas
Preheat oven to 275 degrees. Grease & flour 9×13 pan.
In a small bowl, mix mashed bananas with lemon juice; set aside.
In another bowl, mix flour, baking soda & salt; set aside.
Then, in another bowl, cream butter & sugar until light and fluffy. Beat in eggs, one at a time, then stir in vanilla.
Beat in the flour mixture alternately with the buttermilk. Stir in banana mixture and pour into prepared pan and bake for approx. 1 hour. Remove from oven and place directly in the freezer for at least 45 minutes.
Note: I have made this cake without freezing and its still SUPER moist. You could very easily get away with not freezing. Everyone that has this cake says its absolutely delicious, especially with cream cheese frosting.

I've been struggling with a banana cake recipe myself. One I used was a modified yellow box recipe but it only baked up 2 - 1" layers.
Maria....I was gonna add some mashed bananas to my WASC, but was afraid with the sour cream, it would make it too dense. Is your vanilla cake the WASC or scratch?
