when I cover my cakes with fondant and put it in the freezer or refridge. why is the fondant always glossy and it makes it difficult to airbrush or paint. how do i keep it dry, please help!

condensation from being taken out of the fridge...just like a cold can of soda will sweat. it will dry up eventually, give it time or to really speed it up...put your cake in front of a fan. works wonders...just try not to touch the cake while its sweating or you will leave finger print marks

Why are you putting it in the fridge in the first place?

I put mine in the fridge to protect the icing under the fondant and the filling. You're right, a fan is crutial. Anything taken out of the fridge on a hot summer's day will sweat until it comes to room temp. A cold cake is a happy cake - during delivery.
