New to Fondant and cake, wondering how far in advance you can make a cake and cover it in Fondant, and does it sit out covered or sit in the fridge covered?
Using lemon pie filling.

Usually 2-3 days. You don't want the cake to be stale or get moldy. Best not to 'frig it if you can.

I like it best on day 4 or 5. It won't start to grow mold for about 2 weeks.

Thank you for your help.

I decided two vacation days from work will help me out, not only to relax but to finish the cake.

Next cake, I'm going to try freezing!
