So I'm making a snickerdoodle cake, n can't decide on the best filling...

Any suggestions?

cinnamon streusel mixed into cinnamon bc or apple pie filling...both are great with it. the snickerdoodle cake is my favorite!

When I make the snickerdoodle cake, I bake a snickerdoodle cookie the same size as the cake layers, and then layer that in between buttercream between the cake layers. So it would go like this:

Cake
Buttercream
Snickerdoodle cookie
Buttercream
Cake

The buttercream softens the cookie, but leaves it a cookie texture. It's gotten really good reviews!

I use cinnamon buttercream. PM if you want the recipe. I got it off this site. Its very yummy!

i use the recipe off of this site. it's amazing! one of the 2 flavors that people request from me the most. and the one here has the cinnamon buttercream recipe on the same page so you don't have to hunt for it. and you can always use cinnamon oil or flavoring if you don't want the cinnamon to show. thumbs_up.gif

I've thought to put a soft sugar cookie into my cake layers, but for some reason that didn't even occur to me here... WOW what a great idea, the entire cake would have much more of a true snickerdoodle flavor with the cookie!! Thanks. Nd I'm gonna try the cinnamon bc... Perfect, thanks!

I use Bavarian Creme. Will have to go look at that recipe, since I made up my own recipe.

Is the Snickerdoodle cake dense enough to be covered in Fondant? Also, instead of one large snickerdoodle cookie between the layers, would breaking up cookies and putting them in the cinnamon buttercream work? Thank you.

The recipe I use is based on the WASC. I don't cover with fondant, but I know that tons of people do with no problems.

I think chunks of cookies in the buttercream would work well, too - just based on what you'd like.
