My brother really wants me to make him a gooseberry cake. I'm really not sure how I'll accomplish this; I think I'll probably have to do a WASC cake with a gooseberry filling. I'm looking for advice from anyone who has ever attempted such a thing and/or has a recipe for another fruit filling that might possibly be converted to a gooseberry filling. If you do happen to have a gooseberry cake recipe, I'd be interested in that, as well!

Thanks!

Make a jam out of the gooseberries and use that as a filling. If you bake them, they tend to release a lot of juice, best to bind by making jam. or at least cook them with a bit of cornstarch to bind the juices
