Someone asked me if I could make them a Topsy turvy/mad hatter cake. I stupidly told them sure I can do it! Yeah I give you ladies credit because it is way harder than it looks! Everything was going fine until I stacked them and then the side started falling out! I'm not sure what happened but I have a few guesses. 1. I think I put to much filling. 2. I think I narrowed the sides to much and it couldn't handle the weight. I used dowels and everything. The cake itself is sturdy just the sides are falling out! I have mended it the best I can so hopefully it looks ok when it is finished.. My lesson is learned.. Never say you can do a cake unless you have previously made one like it successfully!

My first attempt the bottom layer actually split before I stacked them so you're way ahead of me. For fillings stick with stiff fillings such as buttercream and ganache. Jams and sleeve fillings are too slippery. Now that I have learned to use ganache under fondant that makes the cakes more stable as well.
