I've been approached by one of our local bakeries and asked if I would decorate cakes for them. I'm ecstatic, but at the same time at a loss. I need to give her what I would charge just for decorating (since they'll be baking the cakes) and don't know where to start. Should I do a by-the-hour charge or ask if we can just do it by the cake requested? I've only been decorating for a little over a year now and I've been using Alice's matrix to determine what I charge the friends and family I've been baking for. But...I've no clue what would be best in this situation. I'll still be providing all the equipment and supplies for the finishing of the cake (ie, icing, fondant, colors, etc.). Any help is GREATLY appreciated. Thanks!
