I keep reading about how great Buttercream Dream icing is but I need one that crusts. Can someone tell me if it does?

I think it does if you let it sit awhile. I can't quite remember, sorry! But it is DELICIOUS!

It didn't crust for me. The next day, it was just as soft as when I first put it on the cake.

Does this frosting need to be refrigerated? Can you use hi-ratio shortening for this or does it have to be regular crisco?

This is one of my standard BC and it always has crusted for me and does not need to be refridgerated, plus I can scale the butter/shortening ratio up or down depending on what I have on hand or how I want it to taste/look.

I make this with Hi-Ratio and it does crusts after about 15 minutes. I use the Melvira method to smooth. I was making Eaarlene's cream cheese icing but got so frustrated with the wierd amounts especially when you try to cut it in half that I just experimented and do 8 oz. or 1 cup of cream cheese and 1 cup Hi-Ratio, a 2 lb. bag of powdered sugar, popcorn salt, liquid and flavoring. This recipe has proven to be a fav with customers!!

I don't know why, but I've never had it crust for me unless I refrigerate it. I couldn't get it to smooth very well either, even with the Melvira method - it just seems too soft.

It crusts for me but only when I use store brand shortening. I add vanilla butter nut flavorng and it is sooo yummy. It does make it a little yellow because the flavoring is red but I can fix that with whitener!

I must say when I first made this icing a couple months ago, it's one of the best-tasting bc's out there.....however, it never crusted for me and was WAY too soft to use! I had to remove all of the icing on the cake and start over with my own bc. But, like I said, it's delicious!

Never had a problem with it, it tastes wonderful and my customers always request it instead of the full shortening recipe which I offer also.

It crusts nicely, remember to use the exact measurements because if you don't it wont crust. It doesn't need to be refrigerated and that is a nice plus. It also handles colors well!! icon_biggrin.gif

IMO

My way of getting it smoother is after I mix it in the mixer I let it sit for about 5 minutes then take a spoonula and stir it...it releases the airbubbles therefore making it a smoother icing
