First, I'm no professional, so please go easy...lol

I only make cakes for family & cake walks at the school & normally cheat & use Wilton's tub-o-icing :\\ (Hey, i'm really pressed for time w/ 7 kids!) Anyway...my oldest son is wanting a cupcake cake for his birthday tomorrow for his class. He has requested chocolate icing...I'm looking for a recipe for a good chocolate icing that will hold up over a cupcake cake without falling through the cracks between them. I will not have time to go through the trial-and-error process b/c we have 2 doctor's appointments today & 2 cakes to make for him & my daughter's party on Sunday. So, I'm hoping someone has already done this & can give me a good recipe w/ details (salted or unsalted butter, sifted sugar or not, shortening with or w/o trans fat, etc...) Also, keep in mind that this will be for 22 ten & eleven year olds who I'm sure like sweet, not mild, tasting icing icon_smile.gif Thanks! I love CakeCentral!!

Also, a local store sell's Duff Goldman's chocolate icing in a tub...has anyone tried it?
