Hello,
Just wondering if a cake iced with buttercream can be stored in the fridge overnight without being wrapped? I plan on icing and decorating the cake Sat. night, but it will need to be refrigerated until Sunday when I serve it because it will be filled with chocolate mousse.
Any suggestions?

I've done it before, but be aware that the icing may pick up flavors/scents of other foods in the fridge.

I had a separate 'cake fridge' in my bakery work room, which was really nice. icon_smile.gif

Perhaps you can refridgerate until the frosting is firm, then cover lightly - or put it in a cake box, the keep it in the fridge overnight.

Thanks for the help! I actually have a small fridge in my basement that's currently empty....perfect place. Never would have thought of that on my own! Thanks!
