I was just wondering 
I don't get how they sculpt their cheesecakes?! and cover them in fondant?!

I think their carved and stacked cakes are regular cake with a cheesecake filling, not solid cheesecake. If you watch the slide show on the left of the home page (you have to wait through about 10-15 photos), you'll see a slice of the cake, and it's mostly regular cake.
