How Do I Prevent Cracks When I Stack Fondant Cakes?

Hello-- Today when I stacked a 4-tier fondant cake, there appeared several large cracks on the top sides on two of the cakes. icon_cry.gif Since the fondant was hard, all I could do was try to disguise the cracks with my fondant cut-outs. How can I prevent this from happening? Also, any suggestions of how to "fix" this when it happens would be appreciated! Thanks so much--I have learned soooo much from you all!

Sounds like you're cutting your dowels too short. When you place a tier on top, it pushes down on the fondant below it, causing it to crack. Your dowels should be level with the top of your fondant.

ditto.

When it happens and you have to fix it on the fly, melt some of the fondant in a bit a water to make a paste. I use the edge of an Xacto knife to smooth it on the crack.
