Convection Baking Compared To Regular Oven?

My husband and I ordered new appliances this weekend and my new oven is convection. My sister loves hers but doesn't know why icon_confused.gif and she's not a big baker any way. I was just wondering what the difference was and if there are any hints or tips I might need to know to make the adjustment. Thanks in advance.

Turn the temp down by 25 degrees at least.
Cakes will bake 25 percent faster, too.

Keep an eye on them until you learn how it bakes.

I generally bake at convection 310.

Thanks! I'm also in the market for a new oven, the circa 1980's "Kelvinator" that came with my house has just about had it! My DH works for Sears, in appliances, and has been preaching the wonders of convections but I fear the unknown! Lol! Sad to say I value your opinion more than his, he knows ovens, not baking icon_smile.gif

I recently moved and had to leave my wonderful convection oven behind. I miss it terribly. Convection improves the texture of cakes and works wonders on cookies.

Thanks for the replies. Their coming first thing in the morning so I'm planning on trying out a few different tried and true recipes to see the difference. The neighbors are going to think I've jumped the gun for Christmas icon_smile.gif
