Convection Oven Or Conventional Oven? Gas Or Electric? Size?

What size oven do you have in your commercial bakery? And do you highly recommend convection? Thanks for your tips!!

I had double convection ovens.....I could bake 10 of the 18x26 baking sheets at one time; could bake 2 or 3 wedding cakes all at once, depending on tier sizes.

Highly recommend convection ovens. the last issue of CC magz had an article by me with tips on ovens.

The only way I can bake a decent cake in a convection oven is to turn the fan OFF.

Cookies, bread--oh yea! They do great with the fan on.

I recommend a convection oven that actually lets you turn the fan off...we have a convection oven at our commercial kitchen that can change the fan speed to low, but it is always on. We have to use one of the non-convection to bake vegan cupcakes, since the batter ends up lopsided. Vegan cakes are OK, as well as non-vegan cupcakes.

i have an electric convection oven,a southbend, bake cake at5 275
