A sheet cake generally refers to a single layer flat cake. Mine, without frosting are probably 2-2 1/4 inches (they fill the pan level to the top) and with frosting they might be 2 1/2
For a wedding, I like the look of a tall 4" cake with filling. Looks more substantial on a plate. Single layers are fine for "party" cakes IMO.
I will be filling mine, so I guess I will go for the generous 4 inches, i do think it will look nicer on the plate, also I read some where that the taller the cake, the more servings you can get out of it... I guess it makes sense b/c if it's tall enough then you can cut it thinner.
Wow, that is generous, I was thinking 3, but if it is torted with icing in the middle, that is about right. Great question, I have to make one this weekend. Also, what is your measurment on your sheet cake?
My pan is 11X15x2
