Does anyone have a favorite carrot cake recipe that they use? There are so many to choose from. Also one that would be good for cupcakes?

This is my favorite carrot cake recipe. http://allrecipes.com//Recipe/carrot-cake-iii/Detail.aspx I read through all the comments and took the suggestions of using 1/2 white sugar and 1/2 brown and this is to date my mom's FAVORITE cake.

That one sounds real good too. Its been a while since I made a carrot cake, and I know that I have a recipe written down somewhere, but do you think I can find it? Of course not. I have a funny feeling that someone walked off with it! HMMM and I think I know who. Its funny that you put half brown half white sugar, because I'm pretty sure that this recipe has that also, and if I'm not mistaken it also has grated apples in it. It was a recipe that I tweeked a good 20 years ago. Oh my did I just say 20 years?
