Sorry if this sounds kinda dumb, but I haven't done much with freezing cakes, and I don't want to waste a bunch of cake practicing, soooo I have a couple of quesitons.

1. Do you leave the cake in the wrapping until it's thawed? Do you leave it out at room temp or in the fridge?

2. If you ice a cake and then freeze it, do you cover it with plastic wrap? If not, how do you thaw a fully iced cake?

3. Can you freeze a cake (uniced or iced) after it has already been in the fridge for a day?

TIA for the help! icon_smile.gif

If it is just a cake you can wrap it and put it in the freezer. If it is an iced cake you want to put it in a box and wrap the box.

You do want to leave the wrapping on while it thaws so that the condensation forms on the outside of the wrapping not on the cake/icing.

I've heard of thawing it both ways, in and out of the fridge.

I froze a cake last week and took it out when I needed it and took the wrapping off of it and let it thaw on my counter. I wrapped it in saran wrap and than foil for freezing. THe cake was so moist it was unbelievable. I haven't frozen a cake iced yet!
