I did one 3 days in advance on a cookie then just covered with saran wrap and foil. If it is wrapped well enough it will be fine.

As long as it wrapped well, it should keep for some time. I have read that buttercream will keep in the fridge up to 2-weeks, but I would want to check that out. But a week in the freezer should be fine. I would think that the conditions that something could be kept would depend largely upon the sanitary conditions upon which it was prepared to start with.

Yea.. I've made them ahead and once hard, layerd several in a Tupperware container. I'd feel find with leaving them a month or two in the freezer if well sealed.
