a customer wants a cake one side almond and the other side chocolate. How do I divide them? Do I have to make two seperate cakes and just put them next to each other or is there a way I can split the batter in two into one pan?

I've never done it and someone may know if a way without purchasing a tool especially for it. But you can buy a cake batter separator. Go to country kitchen sa . com (no spaces) search for cake batter separator.
