According to the DC Cupcake website, their signature frosting is a cream cheese frosting. However on their FAQ page, it states their cupcakes are safe to stay out of the fridge for up to 24 hours.

How can that be? I thought cream cheese frostings were perishable and need to be kept cold? Is that not correct...?

Cream cheese frosting can stay out of refrigeration for a day because sugar is a preservative.

It depends on the recipe. Earlene's website has one that can be left out. Some need to be in the fridge.

Their icing is more like a cream cheese/buttercream mix. It's delicious. Since it's not a straight cream cheese then it's safe to leave out because of the higher ratio of sugar that acts as a preservative.
