Ideas For Left Over Chocolate Cheesecake?

I helped my son make chocolate cheesecake today and we made a little too much (like double!) of the cheesecake mixture. Any interesting ideas for what to do with it?

stuff strawberries

cake balls, you can roll then in graham crackers instead of dipping in chocolate

Cheesecake pops! SO YUMMY! Put leftover mix in pan in the freezer to set up firm. Cut into squares and put a stick in each square. Put back into freezer to become very firm. Make a chocolate ganache and just to make it fun, stir in some peanut butter. When ganache is ready, dip the cheesecake pops in the choc and place on wax paper. You can make them fun and cute by dipping and rolling in nuts, sprinkles, coconut or whatever you like.

Have fun, I am sure your son will love these. My 10 yr old daughter loves to help create and then eat. thumbs_up.gif
