I am planning baking this carrot cake, but am not sure if I need to refrigerate...

if you are making that icing and it's as soft as a typical carrot cake cream cheese, then I would. As an alternative, you could consider making the crusting cream cheese icing from the recipes section and then not refrigerate. HTH!
