I want to try to cover a cake with ganache and then fondant. I have never done this before. Do I need to refridgerate the cake after it is covered in ganache? Will it make my fondant sticky if I do?? I need to decorate this cake for Saturday to be delivered Sun.

No you don't refrigerate once it's on the cake; let it set overnight if you can. Another thing, once you make the ganache let it firm up overnight in a bowl covered in plastic on the counter; it should be the consistency of peanut butter. Don't forget the hot spatula technique to get really smooth. Once it sets on cake you can spritz with water or brush on apricot glaze to help fondant stick. HTH
