How Long Can I Keep This Buttercream Icing??recipe Enclosed

I am making a cake for my daughters 1st birthday this weekend and have to make a friends b-day cake for next weekend.

I am making the same cake and buttercream icing for my daughter' and my friend so I want to double my buttercream recipes. I'm not sure if it will stay good till next saturday...any feedback??

Snow White Buttercream (for the outside)

2/3 cup + 3 tablespoons water, divided
1/4 cup Meringue Powder
12 cups sifted confectioners' sugar, (about 3 lbs.) divided
1 1/4 cups solid vegetable shortening
3 tablespoons light corn syrup
3/4 teaspoon salt
3/4 teaspoon no-color almond extract
3/4 teaspoon clear vanilla extract
1/2 teaspoon no-color butter flavor

Buttercream filler recipe

1 pound bag of powdered sugar
1/2 cup milk
1/8 to 1/4 teaspoon salt
1/2 teaspoon Vanilla
2 sticks butter, cut into ½ inch slices
1/2 cup shortening


Do you think they will be okayin the fridge for a week and a bit?

1 week is how long it will last in the fridge. I like to do 5-6 days tops. You can freze it, but 1 week is what I have read is the longest in the fridge. Hope this helps.

Thank-you...I have read I week as well but you can't always trust everything you read.

How is icing once you freeze it?? Is it runny at all?Does it depend on the icing?
