I need a good recipe for buttercream I have a wedding cake for June 19

For a crusting buttercream I use Indydebi's Buttercream receipe. It crusts beautifully and is so easy to smooth. If you wanting to make a meringue based buttercream I recommend The Well Dressed Cake SMBC receipe. Both receipes are found on this site.

Can you use this under fondant or is it too soft?

Yes. It's the only icing I've used for 30 years and I use it for everything.

I haven't used it for 30 years but it's the only crusting buttercream I'll use. This stuff is awesome. thumbs_up.gif

hello, indydebi do you mean your frosting is the only frosting you have used for 30 years or the smbc? I ask because I was wondering if you are able to use the smbc under fondant?

Yes you are able to use SMBC under fondant. After icing and smoothing your cake, put it in the fridge to firm up before covering with fondant. It works very well under fondant. I really like SMBC but due to heat and humidity I don't use it very often.

I wanted a new buttercream recipe for the wedding cake I made over the weekend. I found it on CC and it is Extra Special Buttercream. I found it in the icing recipes and it was "Super Simple!" It is alot like traditional buttercream but not as sweet. It does call for whipping cream so if you make the icing ahead of time it will have to go in the fridge. The bride and groom were happy! thumbs_up.gif
