There is a picture from Little Venice Cake Corp in issue number 2 that is a 4 layer square cake with white pleats and numerous green flower varieties in 4 layers as well. The picture is on the left side near the back of the magazine. There is bird wall paper behind the cake and on the right side is a picture from Christy Albertson.

I do know some are hydrangea and orchids but I want to make the other options - one has a ton of flower petals and one is round.

Can anyone help me?

Green mini-mums, and green mums (not fully opened).

Now wouldn't that be nice if there was a tutorial telling us how to make the green mini mums. I like the look of those. And those mums - WOW - looks difficult!

There is a tutorial in the new Floral arranging book from Alan Dunn that shows how to make these. I made them for a cake last month. They came out ok, not a realistic as I would of wanted them to. But basically what you do is twiddle green gumpaste on wires, several of them, and then arrange them around a daisy center. You have to bend them in somewhat to be like a backwards C before they dry though.

The small ones are button mums and the big ones are spider mums

I suspect your magazine will arrive this week. I just received mine the day I posted the inquiry.

Those are fresh flowers, but you can make pretty realistic button mums with a grass tip.
