Using Fresh Strawberries In Filling

Cake is due Tuesday, for office baby shower. I have to work on it Saturday and Sunday. I wont have much time on Monday because I am working a long day. Will the strawberries be OK if I assemble the cake on Saturday. It will be kept in the fridge.

Btw, cake will be frosted with ganache and covered in fondant and/or modeling chocolate.

If you keep it in the fridge you shouldn't have a problem. Just try to minimalize the amount of time that it's at room temp (other words, work fast when decorating!).

I just did a cake with fresh s'berries this past weekend. They were VERY juicy! I did keep it in the fridge (filled/iced on Thur night, delivered on Sat morning) while not working on it, and it was fine. I even called the mom of the b'day boy and asked her about it, and she said it was great...and delish!

Missy Tex how did it turn out? I'm doing one with fresh strawberries tomorrow for a Saturday wedding (topsy turvy cake)
