I'm still really new at doing cakes and really need advice about the timing and what not of decorating a a groom's cake and a wedding cake ( that are very intricate designs) for a wedding next sunday. The wedding is on sunday but it must be done by saturday because I have a six hour drive to a rehearsal dinner (yes, im IN the wedding too)
My plan was to
- SUN: bake all cakes, cool, wrap airtight and freeze
-MON/TUES: finish up on detail work (gumpaste details, etc.)
-WED: color my icings
WED NITE: thaw out groom's cake
-THURS: decorate groom's cake
-THURS NITE: thaw out wedding cake
-FRI: decorate wedding cake
I guess my main question is about staying fresh tasting and moist. I'm worried because I've never frozen a cake before.
