I use the "yellow portion control" one, you should be able to find it online or at a restaurant supply.
I use this one (link below)...it makes a perfect sized cupcake. I had been using 2 different sized scoopers (1 full scoop of each one was the right amount) until it finally dawned on me to figure out how much the combined capacity was so that I could use only 1 scoop. It's a size 30, equivalent to 1 1/4 oz. This one works great. I like how the squeeze is in the handle instead of a thumb lever.

Funny mine is the yellow one from the restaurant supply as well. Just went and measured and it's the three tablespoons. Having the perfect scooper is critical. I use the small cookie scoop for mini cupcakes![]()
I use the Oneida stainless scoop from walmart for the big ones and the small one for the mini cups. Works perfectly for me.
I have 2" Scoop that fills the cupcake liner with just the right amount so that when baked it comes right to the top of the liner. I Love it!
