Cake With Cream Cheese--Refridgerate?

Hi everyone,

I am completing a cake for one of my students at school. She has asked for a red velvet cake with cream cheese frosting. I am also going to cover this cake with fondant and fondant polka dots.

I was looking for a crusting cream cheese frosting, and stumbled upon several websites that say how imperative it is to refrigerate the cake after being covered in this frosting. However, I dont refrigerate my fondant cakes because it would totally ruin them by getting super sticky and gross.

Can I leave a frosted cake out with cream cheese overnight covered in fondant? Will it spoil the cake?

I guess I could also leave it out in my mudroom for the night, which wont get any less than 50 degrees....ugh I'm so confused!

If I could get some advice on this burning question, it would be greatly appreciated!

I just made a red velvet cake with cream cheese icing covered in fondant and royal icing decorations. I refrigerated it with no problems. Just don't touch it when it comes out of the refrigerator.
