Gumpaste is used for flowers. It dries harder and faster than fondant. So with flowers it whill help the petals dry where you put them.
Fondant is used to cover cakes with and decorations on cakes that don't have to stand on their own.
You can blend the two as well, depending on what you are doing and what you need it for.
