Hi Everyone,
I'm a Wilton Instructor and I have a student who is a vegan and can't use the merengue powder to make royal icing. She found a recipe that used baking soda, but it just didn't hold up. Does anyone know of a good eggless substitute to use or have a recipe she could use?

I have never heard of such a thing.

She can probably make most of the flowers with a shortening-based icing, then freeze them and put them onto the cake frozen?

There's a product out there that's a powdered egg substitute that works similar to meringue powder. It's called Ener-G Egg Replacer. I've heard about it on vegan baking sites.

The recipe that goes with it is:

7 Tablespoon water
4 Tablespoon meringue powder (used Ener-G egg replacer)
7 cups of vegan powdered sugar
1/2 teaspoon cream of tartar

I've never used it, but hopefully it might work?

Look on Williams Sonoma's website under their recipes. I have made it without eggs or meringue. My daughter had a classmate who was allergic to eggs, so I had to decorate cookies without egg products.

Baking soda??? There's no way that would work! And it would taste nasty!

Thanks everyone! I will definitely pass this along to her. We found a recipe using corn syrup that she used last night. It seemed to work a little better, still not quite right though.
