I've been asked to price a wedding cake for 200 people. I've never done a 'wedding' cake but have done other cakes. So I'd like to try to do it, to see if I can. But I don't know where to start.

How big?
How much should I charge?

I don't have many pans, so what will I need to buy?

Please help!

Here is the link to the pricing matix. This can give you an idea of what to charge.

Now as for the size. How many tiers are you looking at? You already know the amount of people so now you have to decide how many tiers to devide it into or if they want a certain amount of tiers than devide it up that way. Careful on the last one because they could want a xxx number of tiers but it just can't/won't be done. So with that said, with caution guide your client to the correct size cake. Hope that helps.

oh forgot to add....don't forget the structural support. You will need to remember that the more layer the more support you will need.

Hope that helps

Everything you need to know to make, decorate and assemble tiered/stacked/layer cakes:

http://www.cakecentral.com/cake-decorating-ftopict-605188-.html

The above super thread has popular CC recipes for crusting American buttercreams, several types of fondant and doctored cake mix (WASC cake and other flavor variations) - and so much more!

If you use the link above to Wilton cake making help, you can then go to "weddings" - you'll find the info/help you need from what combination of cakes yield 200 servings to what size pans you'll need and much much more..

Only the BTB can decide what constitutes the cake of "her" dreams. It's impossible for any of us to tell you what pans to buy since you didn't provide the design of the cake or number of tiers the BTB desires.

Here's a thread with questions to ask the bride about the cake:
