I have been asked to do a class for 4th/5th graders on cake decorating. We are talking about 2 consecutive mornings (9-12, each day) Four kids, all of whom are "Ace of Cakes" fans. Has anyone done anything like this. I am looking for ideas on how to structure it.

I'm thinking I would prebake the cupcakes/cakes and work more on design and figure modeling, but I am open to ideas.

A few years ago, I did a Valentine's Day Kids cupcake class. I made all the cakes (cupcakes & petite fours). On site, we made icing and colored it. Then we came up with designs and in the end, we created a cupcake bouquet. The kids loved it but I was totally exhausted.

I taught a kids cake class in November. I decided to teach the clown lesson from Wilton's course 1, since I'm a Wilton instructor. Hope this gives you an idea of what to do. My class was only 2 hours though.
