Does anyone have a recipe for sugar cookies that can be rolled out that is egg free?

I have gotten a request from someone who's little boy is supposed to go on the Polar Express and she wants a treat for him to be able to have.
I told her I would get back to her today one way or the other since she needs the cookies for Monday.

Any help is greatly appreciated!!

In one of my recipe i substitute half egg for bananas..
Maybe you could substitute all of it for bananas (1 large egg = 1/4 cup smash banana)

Could you use shortbread instead of sugar cookies?? It's egg free and super yummy!!
