I don't know if anyone else saw this last night or not. I was watching Cake Boss - and he gave an EXCELLENT tip - he said instead of using fondant to cover a round (nearly impossible to do) to use chocolate clay to do it - that way you can go back and smooth out the seams and such and get a perfect finish on it. I had one of those "light bulb" moments right then.

Just thought I would pass it on for those who didn't catch it.

Yes..I saw that also..I liked the idea of making fir trees from modelling chocolate as well ..much easier than piping a royal icing one...This is why I like Cakeboss because although it is staged and sometimes aggrevating with the arguing and such..he shows some great techniques..more so than Ace of cake I think! I sure wish I could get ahold of his sponge cake recipes though...they are so sturdy!
