I am making my niece's wedding cake and she wants red velvet with cream cheese frosting.....THE PROBLEM is this cake is covered in fondant and camouflaged to look like a tree. CAN I use cream cheese frosting and does it have to be refrigerated? Has anyone ever done this?

I have used cream cheese frosting and even canned Pilsbury frosting. As long as I keep them refrigerated, it hasn't been a problem.

On almost all my orders I use cream cheese and I've done fondant over it several times. I always store them in the fridge, and thus far haven't had any problems. I use Fondex.

Good Luck- Red Velvet is my favorite!

Maybe you could suggest using a cream cheese filling between the layers and use regular buttercream for under the fondant. I think Lorann's has a cheesecake flavor oil. You might try that to give the buttercream a cream cheese flavor.

Just some ideas.
