I use the styrofoam cup and just pour the icing around the top edge first to let it run down the sides then I cover the top. You do not need to tip the rack.

The best "out of the box" idea I've ever had for pouring the icing is the little pitcher they include in an iron box. I have about three of them and they are the perfect size for holding the icing and the pouring spout makes it super easy to work the edges. I, too, use the rack and pan method for pouring... lining them up like little soldiers with enough space in between to be able to get the sides coated. It works like an assembly line and goes very quickly.
