I've always wanted to try petit fours. How exactly do you pour the icing on the sides, do you tip the rack the cakes are on?
The best "out of the box" idea I've ever had for pouring the icing is the little pitcher they include in an iron box. I have about three of them and they are the perfect size for holding the icing and the pouring spout makes it super easy to work the edges. I, too, use the rack and pan method for pouring... lining them up like little soldiers with enough space in between to be able to get the sides coated. It works like an assembly line and goes very quickly.
