I can just tell you what I did. I used vegetable oil, and cocoa powder ( not the sweet kind that you can just hot water or hot milk for hot chocolate)

Black Midnight Cake

2 cups flour
1tsp BP
2 cups sugar
3/4 cup cocoa
2tsp BS

1/2 cup oil
2 eggs
1 cup hot coffee
1tsp vanilla

I tried this recipe, and the cupcakes were pretty dry on the first day, but after leaving them for a day in an airtight container, they were really soft and moist. Yum! Thanks for sharing.

What flavor icing do you usually use on these? Vanilla buttercream? chocolate? Or if I did chocolate or ganache, would that be too rich??

what about a recipe for yellow cc's? I used Sylvia Weinstock's golden butter cake yesterday which is what I use for cakes and was not happy at all with the way they turned out. They didn't dome. Just kind of rose over the edges and spread out.
