What's A Good Filling For A Dark Chocolate Wedding Cake?

Something besides standard buttercream....anyone have anything fabulous to offer up??? ![]()
I fill my dark chocolate cakes with a caramel filling. It uses butter and brown sugar and cream (?? can't remember because I don't have recipe in front of me). Then after I melt all that together, I incorporate powdered sugar so it makes a great, thick filling that is divine!! This is a caramel filling that you would think of, say in a snickers bar..
I would stay away from the orange with dark chocolate, or mix the orange into buttercream. Some people (aka people like me
) don't like the combo. but chocolate with raspberry sounds wonderful! Or, keep it simple and do chocolate and french vanilla. Or I make one with bailey's buttercream.
I like chocolate with almost anything..

One of my favorite fillings is a pistachio buttercream. It's a simple SMBC base with chopped, toasted pistachios folded in. It's SUBLIME with a rich chocolate cake and no one will expect a pistachio buttercream, but when they taste it they'll go, "Holy crap I've died and gone to heaven!!"

Ganache is a good place to start, especially given its consistency. You can add just about anything you like to it: fresh raspberry or strawberry puree, boiled orange puree with orange liqueur, ground hazelnuts or almonds, other liqueurs.
I then use the ganache to cover my cake too before covering in fondant. It gives a really smooth surface to work on.

this is in the recipe section.... I don't remember who to give credit to but it is WONDERFUL!! and not messy either!!! You have to let it cool so it can get thicker...

6 tablespoons milk
3 cups powdered sugar
Instructions
Melt butter, stir in brown sugar and salt. Boil for 2 minutes, stirring constantly. Remove from heat, add milk and return to heat. Bring to rolling boil, cool to lukewarm and stir in powdered sugar. Add a bit more if necessary for piping.
this is in the recipe section.... I don't remember who to give credit to but it is WONDERFUL!! and not messy either!!! You have to let it cool so it can get thicker...
