HELP! I've been asked to make a 25th Anniversary cake with raspberry filling. I've only ever used butter cream between my layers. Can someone give me some advice and is there a recipe for raspberry filling?

I just made one for a wedding. I put a buttercream dam around the edge, then I used seedless raspberry jam. You can buy those filling sleeves online or at cake decorating stores!! Good luck!

I use jams from the jar...seedless, no added sugar

Another questing about fruit filling!

Do you put a thin layer of butter cream before you put the jam on it? I know that you should make a ridge so that the jam won't seep out, but I'm wasn't sure if you should put a layer of butter cream so that the jam doesn't seep into the cake.

Have you thought of mixing the buttercream with the raspberry jam and using that as a spread? That would be an alternative to just a layer of raspberry filling. Maybe you can try it by slicing a cupcake and see the difference for look and taste icon_rolleyes.gif
