Help!! Sugar Coral

Can anyone tell me how to make coral that looks like rock? I used to have this recipe that contained royal icing and boiled sugar, but that is all I remember. My old boss has a recipe but- well- that will be a last resort icon_smile.gif

Well I have seen them make coral with white chocolate or candy melts.After you melt the chocolate you pour it over crushed ice..as the ice melts and the candymelts/chocolate harden it leaves a coral looking chocolate piece.I saw it on Youtube..Really neat!!Then you can dust it or whatever after it hardens...

i've also seen it done with isomalt poured over ice. icon_wink.gif

no...correction...that was for boiling water. i think you put isomalt in the microwave and after a few seconds it comes out like coral. i've seen this on either cake boss or one of the food network shows. icon_confused.gificon_wink.gif
