i have a few cake orders coming up that are going to involve carving. i have never really carved and they want a chocolate cake covered in fondant. i was wondering, does anyone know of any good, moist chocolate cake recipes that are good for carving?
I really like the "basic yellow pound cake" recipe in the Cake Mix Doctor book, except I use a Duncan Hines dark chocolate fudge cake mix instead of the yellow cake the recipe calls for.

i just made up a dh dark ch fudge cake. it is sooo good. it is my favorite to use too. the swiss cholate from dh is pretty good too. i am really starting to dislike bc mixes though, just not right for my use. ![]()
