i have a few cake orders coming up that are going to involve carving. i have never really carved and they want a chocolate cake covered in fondant. i was wondering, does anyone know of any good, moist chocolate cake recipes that are good for carving?

I really like the "basic yellow pound cake" recipe in the Cake Mix Doctor book, except I use a Duncan Hines dark chocolate fudge cake mix instead of the yellow cake the recipe calls for.

If you want to look at some of the free tutorials on my website that involve carving, go on over and have a look at www.cakedalaska.com

i just made up a dh dark ch fudge cake. it is sooo good. it is my favorite to use too. the swiss cholate from dh is pretty good too. i am really starting to dislike bc mixes though, just not right for my use. thumbs_up.gif
