My girlfriend has asked me to make her wedding cupcakes/cake! I am very excited, but nervous about making the 'keepsake' cake. She's have 125 cupcakes, different flavors, and a cake at the top to keep for their 1 year anniversary. Does anything special need to be done with this cake to make it keep for a year!?!?! She wants just a white cake with butter cream icing for the cake, so do I make it just like I normally would? And what instructions should I give her for keeping the cake? Just freeze it? Help!! Thanks!!!!

I tell my Brides to freeze the cake first (without covering it, no more than 1 hour, but 30 minutes should suffice), then wrap it in several layers of plastic wrap, being sure to completely seal the cake, put it in the cake box and wrap again in plastic and then in tinfoil. Defrost in the refrigerator completely, then unwrap and enjoy.

BTW, I always include a small cake box for them to use in freezing their special cake.
