I'm about to make my first 3 tier wedding cake and was wondering how far in advance I can make it. It's going to be a very simple white fondant covered cake with very little detail...per brides request.

Any help would be greatly appreciated! icon_biggrin.gif

My personal opinion for a fondant covered cake shelf life is 3 days tops. If I covered the cake on a Friday - I would still feel very comfortable delivering it for a Sunday party.

I'd go for 2-3 days. Some people decorate for a week. I suggest you refrigerate it if you use perishable filling.
