I am doing my daughters wedding cake, except she wants to be different, she doesn't want fondant. Instead she would like a cream cheese frosting, light and fluffy with a whipped cream or meringue appearance.(eg. peaks)
I have tried one cream cheese frosting but found that it was not thick enough and ended up adding instant pudding to thicken it. I didn't want to add more icing sugar since it was getting too sweet. Do you have any suggestions for a recipe to follow?
Hmmm....cream cheese icing is pretty sweet, generally speaking...there is a recipe on this site for a crusting cream cheese icing that doesn't require refrigeration...(might be called Wedding Cream cheese icing?) but I find sometimes adding a little lemon juice or salt will cut the sweetness a little...
